I'm squirming just READING that! I haven't any idea! But, I do have a friend who is vegetarian and she uses a product in the store that is some kind of crumbled soy product in place of hamburger. She uses it to make sloppy joes, spaghetti, chili, anything that you would add browned ground beef into. SO, that is an idea - if you aren't set on tofu, and you are just going meat-free...
I suppose you're aiming toward a meatless Friday meal? TVP is what many restaurants use to stretch their ground beef. I know. I worked at one in college. It's not that great all by itself, though--kind of like soggy grapenuts.
If not a meatless Friday, how about ground Turkey? I rarely cook with beef. Mostly bird.
1 pound cubed tofu 2 cans of stewed tomatos (or skinned, seeded, fresh tomatos) 2 cans of pinto beans (optional...also, you could use dried) 1 pkg of vegitarian onion soup mix 1 diced onion 2 Tbsp chili powder 2 tsp salt pepper to taste * additional ingredients
Mix all ingredients (minus *) and simmer over low heat for 3 hours. Clean up kitchen and be prepared to make alternate meal when family revolts and starts gagging from the smell and thought of actually eating tofu.
*1 big, giant sized barf bag (or bowl, optional) 1 handy toilet with working flusher 1 24 package of toilet paper
Dump any tofuchili directly into toilet. Other ingredients are for if tofuchili is accidentally ingested by anyone in the house before you came to your senses and realized that such a thing is an abomination and should never have even been suggested.

I used to use TVP, which I think is what Elm was talking about. But I tofu would be worse and look like barf. :-P
